The former glass shop on the corner of Devonshire Road and Glebe Street is about to become Chiswick’s newest food destination, as pizza specialist Sonay Ali — better known as Doctor Dough — prepares to open his first permanent premises.

The launch will take place in phases, beginning with a “collection only” offer of six of his classic New York-style pizzas. By the autumn, the plan is for the restaurant to be fully open for sit-down dining, with seating for 26 inside, 12 in a courtyard and ten outside. An extended menu will follow once the kitchen and front-of-house operation are fully established.

Sonay has built a loyal following through pop-ups and residencies, including an eight-month stint at the Brewery Tap, and his original stall in Lyric Square, Hammersmith which he set up in 2024. It was so successful that he was invited to operated from inside the nearby theatre during the busy panto season. Since then he has built up an Instagram following of close to 10,000 as he tries to spread the word about healthier, more nutritious pizza.

His journey into dough-making began in unexpected circumstances. Diagnosed with Crohn’s Disease, Sonay struggled to digest many foods and began researching dough and bread-making as part of his search for something he could eat comfortably. He now holds a master’s degree in nutrition and works as a pizza-dough consultant, having studied techniques in Italy and New York. His conclusion: New York-style dough, with its long fermentation, is easier to digest and produces a lighter, more flavourful crust.

At the new Chiswick restaurant, Sonay will initially handcraft every pizza himself, working alongside his girlfriend Alice-May, who will run the front of house once the doors officially open.

Announcing the move on Instagram, Sonay said: “This neighbourhood means a lot to us. We’ve had our sights set on Devonshire Road since 2023, so to finally find our home here feels even more meaningful. We’re in great company too, surrounded by some of the best pizza, brunch, coffee and bakery spots you’ll find in London.”

He added that more details on opening dates, menus and the soft launch will be released soon — along with the restaurant’s first merchandise drop, which will be available for pre-order on a limited basis.
